Smothered Blueberry Chicken Recipe

Smothered Blueberry Chicken is the perfect summer dish. This is the perfect combination of sweet and savory.

Not only that, this is a healthy recipe and perfect for all age groups.

This may sound a little funky to some, but blueberry chicken is guaranteed to be a hit at a family dinner or group barbeque.

What you’ll Need

Based on serving size of 2:

For the Chicken

  • 2 skinless chicken breasts
  • ¾ tsp fresh chopped rosemary
  • Salt, pepper, garlic powder, paprika

For the Blueberry Sauce

  • 1 cup of fresh blueberries
  • ½ tbsp of chopped fresh rosemary
  • ⅓ cup of natural maple syrup
  • ½ tbsp brown sugar
  • ½ tbsp of extra virgin olive oil
  • Sprinkle of salt
  • Lemon zest

How to Make Blueberry Chicken

For the Chicken

Blueberry Chicken can be grilled or baked. Honestly, any way your prefer to cook chicken works.

  • Preheat the grill to medium-high heat. Place the chicken on the grill and cover.
  • Cook for 5-6 minutes each side.
  • Remove chicken from the grill when the internal temperature of the chicken reaches 165°F.

Baked Chicken:

  • Preheat the oven to 350° F. Line a baking sheet with aluminum foil or spray with cooking spray
  • Bake the chicken breasts for 30-35 minutes or until the internal temperature reaches 165°F.
  • Let sit for 2 minutes

For the Blueberry Sauce

  • Heat saucepan over low heat
  • Drizzle extra virgin olive oil over the pan
  • Wash blueberries and place in pan
  • Add syrup, rosemary, and brown sugar. Stirring often.
  • Add a sprinkle of salt
  • Top with lemon zest
  • Stir until a few blueberries pop, which should only take a few minutes

Last Step

Drizzle the blueberry mixture over the cooked chicken for the perfect blueberry chicken!

I’d recommend storing the blueberry sauce and cooked chicken separately.

They can both be placed in an airtight container for up to 4 days.

Consider reheating the chicken on the stove or air fryer. Blueberry sauce can be reheated in the microwave or stovetop.

Not only is blueberry chicken delicious, it’s offers so many health benefits. A healthy, simple, and tasty meal!

Blueberries are jam packed with antioxidants. Antioxidants fight against free radicals in the body. Plus, they’re packed with fiber and additional vitamins.

It’s recommended to have 5-6 servings of fruits and vegetables everyday. Most people struggle to meet this goal.

This recipe calls for ½ cup of blueberries each serving–a full serving of fruit with your meal!

Chicken is a lean protein which our bodies need. Protein aids in muscle growth and our bodies need protein to keep running properly.

Plus, protein helps keep us full.

Pure Maple Syrup

Would you believe maple syrup has health benefits? Natural maple syrup offers vitamins and antioxidants.

You cant go wrong with this sweetener. Check ingredient labels to find an option with only the ingredient “maple syrup.”

Herbs in general are an overlooked superfood. Rosemary has antioxidant and anti-inflammatory components!

Some even say that rosemary can boost alertness and improve memory.

This herb has been used for medicinal effects for centuries.

Make it Vegan

Replace the chicken with tofu or plant based chicken for a more plant forward meal!

Make it Spicy

Want blueberry chicken with a spicy kick?

Try these:

  • Replace maple syrup with hot honey (or ½ and ½)
  • Add red pepper flakes to chicken and blueberry sauce
