Smothered Blueberry Chicken Recipe

What you’ll Need

For the Chicken

  • 2 skinless chicken breasts
  • ¾ tsp fresh chopped rosemary
  • Salt, pepper, garlic powder, paprika

For the Blueberry Sauce

  • 1 cup of fresh blueberries
  • ½ tbsp of chopped fresh rosemary
  • ⅓ cup of natural maple syrup
  • ½ tbsp brown sugar
  • ½ tbsp of extra virgin olive oil
  • Sprinkle of salt
  • Lemon zest

How to Make Blueberry Chicken

For the Chicken

Blueberry Chicken can be grilled or baked. Honestly, any way your prefer to cook chicken works.

Grill:

  • Preheat the grill to medium-high heat. Place the chicken on the grill and cover. 
  • Cook for 5-6 minutes each side. 
  • Remove chicken from the grill when the internal temperature of the chicken reaches 165°F.

Baked Chicken:

  • Preheat the oven to 350° F. Line a baking sheet with aluminum foil or spray with cooking spray
  • Bake the chicken breasts for 30-35 minutes or until the internal temperature reaches 165°F.
  • Let sit for 2 minutes

For the Blueberry Sauce

  • Heat saucepan over low heat
  • Drizzle extra virgin olive oil over the pan
  • Wash blueberries and place in pan
  • Add syrup, rosemary, and brown sugar. Stirring often.
  • Add a sprinkle of salt
  • Top with lemon zest
  • Stir until a few blueberries pop, which should only take a few minutes

Last Step

Drizzle the blueberry mixture over the cooked chicken for the perfect blueberry chicken!

Storage

I’d recommend storing the blueberry sauce and cooked chicken separately. 

They can both be placed in an airtight container for up to 4 days.
